Sourdough Rye Bread

You will need:

  1. First, combine 100g of sourdough starter, 200g of rye flour, 300g of bread flour, and 400ml of water in a large bowl. Mix them together until a sticky dough forms.
  2. Cover the dough with a clean cloth and let it rest for about 30 minutes. This resting period, known as autolyse, allows the flour to fully hydrate and begins the gluten development process.
  3. After the resting period, add 10g of salt to the dough. Knead the dough for about 10 minutes, or until it becomes smooth and elastic.
  4. Cover the dough again and let it rise at room temperature for about 3-4 hours, or until it has doubled in size.
  5. Once the dough has risen, shape it into a loaf and place it in a floured bread basket or a loaf pan. Let it rise again for about 1-2 hours, or until it has nearly doubled in size.
  6. Preheat your oven to 220°C (430°F). If you have a baking stone, put it in the oven to heat up as well. Once the oven is hot, carefully transfer the dough onto the baking stone or put the loaf pan in the oven.
  7. Bake the bread for about 35-40 minutes, or until it has a dark crust and sounds hollow when you tap the bottom. Let it cool on a wire rack before slicing.
